Vanilla bean mascarpone with pistachio dacquoise and crème anglaise

Just a few of the delicacies on the menu at the Oregon ProStart High School Culinary Championships held on Saturday, February 27.

Hosted at Chemeketa and sponsored in part by our Hospitality and Tourism Management program, the ProStart Culinary Championships boasted nearly 110 students from 21 high schools from throughout Oregon.

ProStart, a foodservice career training program, is taught in 1,700 schools nationwide. This competition is considered the yearly capstone for participants vying to demonstrate their abilities in teamwork, presentation, menu complexity, taste, knife skills and safety.

Angel Arnholtz, mother of South Salem high school senior Draven Moorehead, cheered on the Saxon Culinary Crew from the audience, just as she did when they won the 2015 Oregon ProState championship.

“I lost my voice. Everybody was jumping up and down, it was one of the best days ever.”

Draven plans to continue his education in the culinary arts and has partial scholarships to several Oregon culinary schools. However, his ambition is set on winning the ProStart nationals and receiving a full-ride scholarship to the Culinary Institute of America in New York.

“He wants to learn to do this well,” Angel said. “All the kids love this.”

The Saxon Culinary Crew’s perseverance paid off, and Draven once again has the opportunity to attend nationals and earn the chance to attend his dream school.
